Heat 2 teaspoons of oil in a pot, add the mushrooms and wait until golden brown.
Add the remaining teaspoon to the pot and add the onion, carrot, celery and garlic.
Cook over high heat and stir the ingredients until golden brown.
Add the water, thyme, bay leaf, and parsley to the pot. Salt and pepper to taste, wait until it boils. Cover the pot and lower the heat, wait 20 minutes.
Strain the broth into a container, add the vegetables and voila!
