Traditional Vegetable Soup

The traditional and exquisite vegetable soup with a unique and special touch.

  • 3 teaspoons olive oil
  • 15 button mushrooms, fresh and cut into large pieces
  • 1 yellow onion, cut into 2 cm pieces
  • 3 carrots, cut into 2 cm pieces
  • 2 stems celery, cut into 2 cm pieces
  • 6 cloves garlic, cut in half
  • 8 cups water
  • 6 sprigs parsley
  • 4 sprigs fresh thyme
  • 1 leaf bay
  • teaspoons salt
  • pepper

  • Heat 2 teaspoons of oil in a pot, add the mushrooms, and wait until browned.
  • Add the leftover teaspoon to the pot and put in the onion, carrot, celery, and garlic.
  • Cook on high heat and stir the ingredients until browned.
  • Add water, thyme, bay leaf, parsley to the pot. Salt and pepper to taste, wait until it boils. Cover the pot and lower the heat, wait for 20 minutes.
  • Strain the broth into a container, add the vegetables, and you're done!
