Ingredients

6 portions
  • 3 teaspoons olive oil
  • 15 mushrooms, fresh and cut into thick pieces
  • 1 yellow onion, cut into pieces of 2 cm
  • 3 carrots, cut into pieces of 2 cm
  • 2 stems celery, cut into pieces of 2 cm
  • 6 cloves garlic, cut in half
  • 8 cups Water
  • 6 branches parsley
  • 4 branches fresh thyme
  • 1 leave bay (laurel)
  • teaspoons salt
  • black pepper

Preparation

Heat 2 teaspoons of oil in a pot, add the mushrooms and wait until golden brown.
Add the remaining teaspoon to the pot and add the onion, carrot, celery and garlic.
Cook over high heat and stir the ingredients until golden brown.
Add water, thyme, bay leaf, parsley to the pot. Salt and pepper to taste, wait until it boils. Cover the pot and lower the heat, wait 20 minutes.
Strain the broth in a bowl, add the vegetables and go!
