Udon Soup

Udon noodle soup with vegetables, an Eastern dish full of flavor and perfect for satisfying the craving for a delicious hot soup. It includes a variety of vegetables, jumbo shrimp, and tasty noodles. Prepare it and enjoy.

  • 200 grams udon noodles, precooked
  • 1/2 kilos jumbo shrimp, peeled
  • 1/4 onions, cut into thin strips
  • 2 cloves garlic, finely chopped
  • 1/2 cups button mushrooms, sliced
  • 2 carrots, in slices
  • 1 1/2 cups broccoli, cut into small pieces
  • 1/2 green bell peppers, in cubes
  • 2 zucchinis, in slices
  • 1 teaspoon ginger, powdered or fresh
  • 3/4 cups soy
  • 4 tablespoons extra virgin olive oil
  • 2 liters water
  • salt and pepper

  • In a large skillet, heat the olive oil over medium heat; once hot, add the garlic and onion for half a minute. Add the shrimp and season with salt and pepper.
  • When they start turning pink or look golden, add the carrots, broccoli, and half a cup of water (reserve the rest of the water) and gradually add the vegetables; first the green pepper, then the zucchini, ginger, mushrooms, soy sauce, and adjust seasoning.
  • In a separate pot, boil 2 liters of water with the precooked Udon. Once boiling, add the contents of the skillet and let it boil again for 5 minutes over medium heat. Serve.
