Udon soup

Udon noodle soup with vegetables an oriental dish full of flavor and perfect to take away the craving of a rich warm soup. Bring variety of vegetables, jumbo shrimp and rich noodles. Prepare it and enjoy it.

  • 200 grams udon noodles, precooked
  • 1/2 kilos jumbo shrimp, bare
  • 1/4 onions, cut into thin strips
  • 2 cloves garlic, finely chopped
  • 1/2 cups button mushrooms, sliced
  • 2 carrots, sliced
  • 1 1/2 cups broccoli, cut into small pieces
  • 1/2 green bell peppers, in cubes
  • 2 zucchinis, sliced
  • 1 teaspoon ginger, powder or natural
  • 3/4 cups soy
  • 4 tablespoons extra virgin olive oil
  • 2 liters water
  • salt and pepper

  • Place the olive oil in a large skillet over medium heat, once hot add the garlic and onion for half a minute. Add the shrimp and salt.
  • When they are turning pink or golden, add the carrots, broccoli and half a cup of water (reserve the rest of the water) and slowly add the vegetables; first the green pepper, the zucchini, the ginger, the mushrooms, the soy and rectified seasoning.
  • In a separate pot boil the 2 liters of water, with the precooked Udon. Once boiling add the contents of the pan and let boil again for 5 minutes over medium heat. It serves.
