Ingredients: 200 grams udon noodles, precooked; 1/2 kilos jumbo shrimp, peeled; 1/4 onions, cut into thin strips; 2 cloves garlic, finely chopped; 1/2 cups button mushrooms, sliced; 2 carrots, in slices; 1 1/2 cups broccoli, cut into small pieces; 1/2 green bell peppers, in cubes; 2 zucchinis, in slices; 1 teaspoon ginger, powdered or fresh; 3/4 cups soy; 4 tablespoons extra virgin olive oil; 2 liters water; salt and pepper

In a large skillet, heat the olive oil over medium heat; once hot, add the garlic and onion for half a minute. Add the shrimp and season with salt and pepper. When they start turning pink or look golden, add the carrots, broccoli, and half a cup of water (reserve the rest of the water) and gradually add the vegetables; first the green pepper, then the zucchini, ginger, mushrooms, soy sauce, and adjust seasoning.
