Vegetable Soup

  • 2 potatoes, cut into cubes
  • 1 cup green beans, in cubes
  • 1/2 cups carrot, in cubes
  • 1 cup corn kernels
  • 1/2 cups peas
  • 1 cup tomato purée
  • 2 squares chicken bouillon cube
  • 7 cups water
  • 1 dried guajillo chile
  • 1 teaspoon vegetable oil
  • pepper

  • In a skillet, heat the oil and brown the potatoes, carrots, green beans, corn, and peas for about 10 minutes.
  • While the vegetables are browning, pour the water and chicken broth into a large pot and bring to a boil.
  • Add the can of tomato puree and the dried guajillo pepper to the boiling water.
  • Add the vegetables and boil the soup for about 15 more minutes to ensure the vegetables release their flavor.
  • Season the soup with salt and pepper to taste and remove the pepper before serving.
