Ingredients

6 servings
  • 2 potatoes cut into squares
  • 1 Cup of green bean in squares
  • 1/2 Cup of carrot in squares
  • 1 Cup of whole kernel corn
  • 1/2 Cup of pea
  • 1 Cup of tomato puree
  • 2 squares of chicken stock
  • 7 cups of Water
  • 1 dried guajillo chili pepper
  • 1 teaspoonful of vegetable oil
  • to taste of black pepper

    Preparation

    In a pan heat the oil and brown the potatoes, carrots, green beans, corn and peas for about 10 minutes.
    While the vegetables are browned in a large pot, pour the water and the chicken stock and bring to a boil.
    Add the can of tomato puree and dried guajillo chili to the boiling water.
    Add the vegetables and boil the soup for approximately 15 minutes more to ensure that the vegetables release their flavor.
    Season the soup with salt and pepper to taste and remove the chili before serving.

    PRESENTATION

    Serve very hot and present with companions such as lemons, chile piquin, maggui sauce and English sauce.

    Gracias por la receta. Quisiera comentar que las vitaminas de las verduras se destruyen durante la cocción, por lo que las sopas nunca son platos vitamínicos. Sí tienen minerales. Saludos.
