Avocado Gazpacho

This is a delicious cold soup to enjoy on a hot summer afternoon. It's not the traditional Spanish gazpacho recipe but it has a lot of flavor.

2 cups chicken broth
1 lime juice
1 tablespoon white wine vinegar
2 cups tomato purée
2 stems celery, cut into pieces
1/2 cucumbers, seedless and cut into pieces
2 cloves garlic
4 leaves basil, fresh
1 avocado, ripe, cut into pieces

In a blender, add the chicken broth, lemon juice, white wine vinegar, tomato puree, celery, cucumber, garlic, basil, and avocado.
Blend on high speed until it has a smooth consistency; if it doesn't fit in your blender, you can separate everything in half.
Place in the refrigerator and chill until ready to serve. You can garnish with small basil leaves.
