Bell Pepper Soup

This is a delicious bell pepper soup. The state of Sinaloa is one of the largest producers of bell peppers in the country.

1 stick butter
1/2 onions, finely chopped
3 shallots, finely chopped
5 red bell peppers, seedless, finely chopped
2 tablespoons flour
1/2 cups tomato purée
2 liters chicken broth
1 sprig thyme
salt, to taste
pepper, to taste
1/2 liters sour cream, for accompaniment

In the butter, sauté the onion, shallot, and peppers. Add the flour and sauté.
Add the tomato puree, then the chicken broth, thyme, and salt to taste. Let it boil for 15 minutes.
Blend.
Return to heat to warm up.
