Bell Pepper Soup

This is a delicious bell pepper soup. The state of Sinaloa is one of the largest producers of bell peppers in the country.

  • 1 stick butter
  • 1/2 onions, finely chopped
  • 3 shallots, finely chopped
  • 5 red bell peppers, seedless, finely chopped
  • 2 tablespoons flour
  • 1/2 cups tomato purée
  • 2 liters chicken broth
  • 1 sprig thyme
  • salt, to taste
  • pepper, to taste
  • 1/2 liters sour cream, for accompaniment

  • In the butter, sauté the onion, shallot, and peppers. Add the flour and sauté.
  • Add the tomato puree, then the chicken broth, thyme, and salt to taste. Let it boil for 15 minutes.
  • Blend.
  • Return to heat to warm up.
