1 can potato with carrot, chopped
1 cup leek, in thin strips
1 tablespoon butter
2 cups canned crushed tomato, it can also be tomato puree
2 cups chicken broth
salt and pepper
1 cup fresh parsley, for garnish

Heat a little oil and butter in a pot.
Add the canned carrots and potatoes, sauté for 3 minutes, add the leek in strips and cook for 3 more minutes, and season with salt and ground pepper.
Add the crushed tomato or tomato puree and let it thicken for 5 minutes.
Once the mixture is thick and has changed color, pour in the chicken broth
Bring to a boil for 5 to 10 minutes.
Serve the potato soup with carrot hot and garnish with fresh parsley.
