2 tablespoons coconut oil
2 teaspoons cumin
1 onion, medium, finely chopped
3 tomatoes, finely chopped
1 cauliflower, cut into medium pieces
1 Jalapeño chile, seedless and chopped
1 cup kale, sliced
1 teaspoon fresh ginger, grated
1 tablespoon ground cilantro
1 teaspoon turmeric
1 can coconut milk, sugar-free
1 teaspoon sea salt
2 tablespoons fresh cilantro, chopped
1 cup vegetable broth

In a medium pot, put the coconut oil to melt for 30 seconds over medium heat
Add the onion and let it cook for one minute, then add the tomatoes, stir, and let them cook for a few more minutes until they are soft.
Add all remaining ingredients and stir. Cover the pot and let it simmer on low for 15 minutes, stirring every 5 minutes to prevent burning.
