Noodles with carrot

This recipe has been passed down through generations in my family; my grandmother passed it to my mom, and my mom to me. Originally, my grandmother made it when someone was sick, but since I learned how to make it, I prepare it whenever I can because it’s delicious! :D

  • 1 package fideo pasta, La Moderna noodles
  • 2 1/2 liters water
  • 3 carrots, sliced
  • 2 potatoes, cut into medium cubes
  • 1 onion
  • salt , pepper, parsley, and celery to taste
  • 1 cube chicken broth
  • 2 tablespoons olive oil

  • We boil the carrots, onion, potatoes, and the other ingredients (except for the noodles and spices) over medium heat for about 20 minutes.
  • We add the noodles and let it cook for another 10 minutes.
  • We serve it and add a few drizzles of olive oil.
