Pea soup without added cream or milk, it is very light, economical, simple, and very quick to prepare. Ideal for children and for people sensitive to dairy.
Cook the peas in a little water that just covers them.
Once the green of the peas is more intense and they are tender, take them off the heat and place them in the blender. Blend to achieve a smooth mixture with the least amount of skin possible.
In a hot skillet, spray a little cooking oil and let the leek slices sauté for one minute.
Pour the blended peas into the hot skillet with the leek and add salt and pepper. Add the amount of warm water needed until you achieve the thickness you desire; it can be thick like a cream or a bit more broth-like.
Let it simmer for a few minutes and adjust the seasoning if necessary.
