Potato Soup

Delicious potato soup prepared in the microwave, this recipe is so easy you'll want to make it again.

  • 3 potatoes
  • 1 red bell pepper
  • 1/2 leeks
  • 1 tablespoon butter
  • 1 liter chicken broth
  • 1 sprig thyme
  • salt, and pepper to taste

  • Remove the veins and seeds from the pepper and cut into strips.
  • Cut the potatoes into medium cubes and slice the leek.
  • Place the butter and vegetables in a microwave-safe pot, cover, and cook for approximately 5-6 minutes on high.
  • Pour in the chicken broth, add thyme, and season with salt and pepper.
  • Cook for 2 minutes or until the chicken broth reaches high temperature.
  • Remove from the microwave and check temperature and seasoning.
