Delicious potato soup prepared in the microwave, this recipe is so easy that you will want to do it again.

3 potatoes
1 red bell pepper
1/2 leeks
1 tablespoon butter
1 liter chicken broth
1 sprig thyme
salt, and pepper to taste

Remove the veins and seeds from the pepper and cut into julienne strips.
Get medium cubes from the potatoes and slice the leek.
Place the butter and vegetables in a microwave-safe saucepan, cover and cook for about 5-6 minutes on high.
Pour in the chicken broth, add the thyme and season with salt and pepper.
Cook for 2 minutes or until the chicken broth reaches high heat.
Remove from the microwave and check temperature and seasoning.
