Spicy Pumpkin Soup

  • 4 cups pumpkin, peeled, seeded and cut into cubes
  • 2 potatoes, peeled and sliced
  • 2 onions, cut in cubes
  • 1 red chile, without seeds and cut into cubes
  • 4 cups water
  • 2 cubes chicken broth
  • 2 tablespoons butter
  • white peppers, to taste
  • 1 teaspoon dried thyme
  • 1/2 cups FAGE® Total 0% greek style yogurt

  • Heat the butter, add the onion and fry until the onion is translucent. Add pumpkin and potatoes. Mix well and add 2 cups of water.
  • Let it simmer for about 30 minutes and then blend the soup.
  • Add 2 cups of water, cubes of chicken broth, chili, thyme and white pepper.
  • Return to the pot and cook for about 15 minutes.
  • Serve with a spoonful of Greek Style Yoghurt FAGE® Total 0%.
