Vegetable Soup with Kale

This soup is very delicious and super nutritious as it contains kale. Kale is one of the best foods you can eat because it is low in calories but very high in fiber, vitamins, antioxidants, and calcium. Kale has anti-inflammatory properties that help detoxify the body. This recipe is an ideal way to include kale in your diet.

  • 2 chayotes, bone-free
  • 1 onion, small
  • 2 tablespoons Worcestershire sauce
  • 8 cups chicken broth, (or half chicken broth and half water)
  • salt
  • 400 grams cabbage
  • 2 tablespoons olive oil

  • In a pot, add olive oil and sauté the onion in pieces.
  • Add chopped chayote, sauté for 5 minutes, and add the chicken broth and Worcestershire sauce. Bring to a boil until the vegetables are tender.
  • Remove the tough stems from the kale and slice the leaves into thin strips. Add half of the kale to the pot with the cooking vegetables and reserve the rest for later.
  • When the vegetables are cooked, blend until smooth, then return to the pot. Taste the soup and add salt if necessary. Add the remaining kale in strips, cook for 5 more minutes, and serve hot.
