Zucchini Flower Soup

A delicious soup for any occasion, try this recipe for zucchini flower soup made with Greek-style yoghurt that gives it a very special touch you can't miss.

  • 2 cups zucchini blossoms, cleaned and chopped
  • 3 cups water
  • 1 cube chicken broth
  • 6 tablespoons olive oil
  • 1/2 onions, finely chopped
  • 2 cloves garlic, peeled and chopped
  • 2 cups FAGE® Total 0% greek style yogurt
  • 4 corn tortillas

  • Chop and clean the zucchini flowers.
  • Heat the olive oil in the pot where the soup will be prepared. Add the onion and cook until translucent. Then add the garlic and zucchini flowers and cook for 5 more minutes.
  • Add the broth and cook for 10 minutes.
  • In a blender, blend the soup in small batches, strain it, and return it to the pot. Add FAGE Total 0% Greek Style Yoghurt and season with salt and pepper.
  • The tortillas are cut into strips and fried with the remaining oil.
  • Serve the soup and garnish with the tortilla strips.
