Xóchitl Broth

  • 8 cups Agua Inmaculada® water
  • 700 grams chicken breast, with or without bone
  • 1/4 onions
  • 1 head garlic, without skin
  • 1/2 cups cilantro leaves
  • salt
  • 1/4 cups rice
  • 1/2 cups chickpeas, cooked
  • 1 cup carrot, in half moons
  • 1 cup pumpkin, in medium cubes
  • onion, for garnish, finely chopped
  • serrano chile, for garnish, sliced
  • avocado, for garnish, in slices
  • lime, to taste

  • Cook the chicken in a pot with Inmaculada® Water, onion, garlic, cilantro, and salt for 30 minutes. Remove all ingredients, including impurities, and reserve the broth.
  • On a cutting board, shred the chicken using a pair of forks. Set aside until needed.
  • In the same pot where you reserved the broth, add the rice and cook for 15 minutes, then add the chickpeas and carrot and cook for 10 minutes. Finally, add the zucchini and the shredded chicken; season with salt.
  • Serve hot and garnish with onion, chili, avocado, and lime to taste.
