Bacon Potatoes Casserole

  • 3 potatoes
  • olive oil
  • 2 cups sour cream
  • 4 tablespoons butter, melted
  • 1 1/2 cups cheddar cheese, shredded
  • 1 cup Mozzarella cheese, shredded
  • 2 cups bacon, fried, chopped medium
  • 1/2 cups chives
  • 1 cup peas
  • salt
  • pepper

  • Preheat the oven to 200 °C and bake the potatoes on a tray with olive oil and coarse salt for 40 minutes. Cut and mash them to make puree.
  • Mix in a bowl the potatoes with the cream, butter, cheddar cheese, mozzarella cheese, bacon, chives, peas and season with salt and pepper. Pour the mixture into a greased baking dish, add a little more cheddar cheese, and bake for 10 more minutes at 200 °C.
  • Garnish with bacon and chives.
