Place a bit of butter on the aluminum foil, arrange the potatoes, and season with salt and pepper, wrap them up.
Place the potatoes in a cast iron skillet or baking tray and bake for 40 minutes.
For the filling, cook the bacon in a skillet over medium heat until browned, add the onion, mushrooms, and cook until they release their juice, add the spinach, season, and cook for 2 more minutes.
