Baked Potato with Mushrooms

  • 3 potatoes, medium-sized
  • 2 tablespoons butter
  • salt and pepper
  • 1 cup bacon, finely chopped
  • 1/4 cups onion, finely chopped
  • 1 1/2 cups button mushrooms, sliced
  • 2 cups spinach, cut into strips
  • 1/2 cups Manchego cheese, grated
  • chervil, for garnish

  • Preheat the oven to 180°C
  • Place a bit of butter on the aluminum foil, arrange the potatoes, and season with salt and pepper, wrap them up.
  • Place the potatoes in a cast iron skillet or baking tray and bake for 40 minutes.
  • For the filling, cook the bacon in a skillet over medium heat until browned, add the onion, mushrooms, and cook until they release their juice, add the spinach, season, and cook for 2 more minutes.
  • Cut the tops off the potatoes and hollow them out with a spoon. Fill them with the mushroom and spinach mixture and place them back on a baking tray.
  • Sprinkle the potatoes with grated cheese and bake again until melted. Serve and enjoy.
