Hawaiian Portabella Mushrooms

  • 2 tablespoons vegetable oil
  • 2 tablespoons onion, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 2 cups deli ham, diced
  • 1 cup pineapple, diced
  • 1 package Monteblanco® portabella mushrooms
  • 2 tomatoes, roasted
  • 1/2 cups chipotle chile in adobo sauce, for the chipotle sauce
  • 1 cup sour cream, for the chipotle sauce
  • salt, for the chipotle sauce
  • pepper, for the chipotle sauce
  • 10 slices Manchego cheese, for gratinéing
  • cilantro, for garnish
  • rice, for garnish

  • In a skillet over medium heat, heat the oil, sauté the onion and garlic, add the ham, pineapple, season with salt, pepper, and cook for 10 minutes.
  • On a cutting board, remove the stem and pulp from the Monteblanco® Portabella Mushrooms, fill with the Hawaiian sauté and set aside.
  • Blend the tomatoes, chipotle in adobo, sour cream, season with salt and pepper.
  • In a baking dish, pour the sauce, place the Monteblanco® Portabella Mushrooms, cover with cheese and bake until golden.
  • Serve the Monteblanco® Portabella Mushrooms with the sauce, garnish with cilantro. Serve with rice.
