Ingredients: 2 tablespoons vegetable oil; 2 tablespoons onion, finely chopped; 1 teaspoon garlic, finely chopped; 2 cups deli ham, diced; 1 cup pineapple, diced; 1 package Monteblanco® portabella mushrooms; 2 tomatoes, roasted; 1/2 cups chipotle chile in adobo sauce, for the chipotle sauce; 1 cup sour cream, for the chipotle sauce; salt, for the chipotle sauce; pepper, for the chipotle sauce; 10 slices Manchego cheese, for gratinéing; cilantro, for garnish; rice, for garnish

In a skillet over medium heat, heat the oil, sauté the onion and garlic, add the ham, pineapple, season with salt, pepper, and cook for 10 minutes. On a cutting board, remove the stem and pulp from the Monteblanco® Portabella Mushrooms, fill with the Hawaiian sauté and set aside.
