Potato Balls with Spicy Mustard Dressing

4 potatoes, peeled
1 tablespoon cornstarch
1 cup Manchego cheese, grated
1 cup chorizo, fried
1 teaspoon cilantro, finely chopped
salt
pepper
2 eggs, for breading
1 cup breadcrumbs, for breading
2 morita chiles, for the dressing
1 tablespoon chipotle chile in adobo sauce, for the dressing
1 cup McCormick® mustard, for the dressing
1/2 cups cream cheese, for the dressing
1/4 teaspoons cumin powder, for the dressing

In a small pot, cook the potatoes with salt in water for 30 minutes or until cooked. Mash the potatoes and set aside.
In a bowl, mix the potatoes with cornstarch, cheese, chorizo, cilantro, and season with salt and pepper. Using your hands, form balls and set aside.
Dip in egg, coat with breadcrumbs, and bread them.
In a pan with oil over medium heat, fry the potato balls until golden brown, then place on absorbent paper to remove excess oil.
For the dressing; in a processor, add McCormick® Original Mustard, morita chili, chipotle, cream cheese, cumin, and season with salt and pepper.
Serve the potato balls with the dressing.
