  • 1 kilo romeritos
  • 6 grams salt
  • 6 nopales
  • 12 guajillo chiles
  • 3 ancho chiles
  • 2 cloves garlic
  • 2 tomatoes
  • 1 onion, roasted
  • 100 grams lard
  • 500 grams new potatoes, cooked
  • 150 grams dried shrimp
  • 250 grams pink shrimp
  • 2 eggs, for the patties
  • 100 grams dried shrimp, ground
  • 10 grams breadcrumbs
  • 150 milliliters vegetable oil

  • Clean the romeritos with enough water, trying to remove the dirt that they commonly have. Boil them in a pot with enough water (enough to cover the romeritos) and salt. Once cooked (they change color), drain and set aside.
  • Cut the nopales into cubes, boil them in a pot with enough water and salt for 10 minutes. Once cooked, drain them.
  • For the sauce: remove the veins and seeds, roast the chiles on both sides on a hot griddle, making sure they don’t burn to avoid bitter sauce, soak them in hot water until soft.
  • Roast the garlic with the tomato and onion on a high-temperature griddle. Move them constantly until the skin is charred.
  • Blend the chiles with the garlic, tomato, onion, and a little water, ensuring the sauce is well blended.
  • Heat the lard and fry the sauce for 10 minutes, add the romeritos, the nopales, the potatoes (previously cooked), and the shrimp (fresh and dried). Season.
  • For the patties, beat the egg whites until stiff, then incorporate the yolks, powdered shrimp, and breadcrumbs.
  • Form the patties and fry in hot oil until golden brown on both sides. Drain on absorbent paper to remove excess fat and incorporate the patties into the preparation. Serve.
