  • Clean the romeritos with enough water, trying to remove the dirt they usually have. Boil them in a pot with enough water (enough to cover the romeritos) and salt. Once cooked (they change color), drain and set aside.
  • Cut the nopales into cubes, boil them in a pot with enough water and salt for 10 minutes. Once cooked, drain them.
  • For the sauce: remove the veins and seeds, roast the chiles on both sides on a hot griddle, making sure they don't burn so the sauce doesn't become bitter, soak them in hot water until soft.
  • Roast the garlic with the tomato and onion on a hot griddle. Stir them constantly until the skin is charred.
  • Blend the chiles with the garlic, tomato, onion, and a little water, ensuring the sauce is well blended.
  • Heat the lard and fry the sauce for 10 minutes, add the romeritos, nopales, potatoes (previously cooked), and shrimp (fresh and dried). Season.
  • For the patties, beat the egg whites to stiff peaks, incorporate the yolks, ground shrimp, and breadcrumbs.
  • Form the patties and fry in hot oil until golden brown on both sides. Drain on absorbent paper to remove excess fat and incorporate the patties into the preparation. Serve.
