Ingredients: 1 kilo romeritos; 6 grams salt; 6 nopales; 12 guajillo chiles; 3 ancho chiles; 2 cloves garlic; 2 tomatoes; 1 onion, roasted; 100 grams lard; 500 grams new potatoes, cooked; 150 grams dried shrimp; 250 grams pink shrimp; 2 eggs, for the patties; 100 grams dried shrimp, ground; 10 grams breadcrumbs; 150 milliliters vegetable oil

Clean the romeritos with enough water, trying to remove the dirt that they commonly have. Boil them in a pot with enough water (enough to cover the romeritos) and salt. Once cooked (they change color), drain and set aside. Cut the nopales into cubes, boil them in a pot with enough water and salt for 10 minutes. Once cooked, drain them.
