Using a potato peeler, remove the skin from the asparagus, being very careful not to break it. Aim to peel only the stalk and not the tip of the asparagus.

Heat water with a few tablespoons of salt. Once it starts to boil, introduce the asparagus and cook for 2 minutes. Remove them from the pot. Do not use the cooking water to cook other vegetables or ingredients, as the asparagus will leave an unpleasant taste in the liquid.

Immediately place the asparagus in ice water. Remove them after a minute and set them aside on a plate.
