For the base of homemade ice cream: the temperature should range between 80°C and 82°C when you are heating the mixture on the stove before cooling it.

To know the exact temperature of your refrigerator: place the meat thermometer inside any liquid (such as milk). The thermometer should read between 2°C and 4°C; that is the ideal temperature for a refrigerator.
