How to roast vegetables

Roasting is similar to baking in that food is cooked in dry, hot air in a closed environment. Roasted foods not only brown but also acquire a very particular finish on the surface. With this tip, you will learn how to easily prepare roasted vegetables to use as a side dish or as a main dish. Discover this super secret.

Step by Step

1
Preheat the oven to 200º. Roasted vegetables should be cooked at high temperature to brown, but without being overcooked.
2
Choose your preferred vegetables; I will use eggplant, carrot, and zucchini, along with salt, pepper, and herbs (such as rosemary, thyme, and oregano).
3
Use a baking mold or a tray; place the vegetables that take longer to cook at the bottom, along with two cloves of garlic and fresh herbs.
4
Spray olive oil over the vegetables and stir lightly. Add lemon juice, salt, and pepper.
5
Bake the mold uncovered for 30 minutes. Keep an eye on the vegetables; if the ones with shorter cooking times are ready, remove them and leave the others for 10 to 15 minutes, stirring occasionally.
6
Remove the mold from the oven and serve.
