To remove the bones from the fish, you will need a good knife that is long, thin, and sharp.

Place the cleaned fish, on its side, on a cutting board.

Identify where the central bone begins, either from the head or the tail, and place the knife underneath, between the bone and the flesh. Slide gently but firmly; always close to the bone, being careful not to cut the flesh.

Repeat the process on the other side of the fish.

To remove the remaining bones, bend a part of the fillet to one side so that some bones protrude, insert the knife between them, and separate from the flesh. Repeat as many times as necessary.

To prevent the fish from slipping on the board or your hands from slipping off the knife, you can sprinkle salt on the board, the fish, and your hands.
