To remove the bones from the fish, you will need a good knife that is long, thin, and sharp.

Place the cleaned fish, on its side, on a cutting board.

Identify where the central bone begins, either from the head or the tail, and place the knife underneath, between the bone and the flesh.

Slide gently but firmly; always close to the bone, being careful not to cut the flesh.

Repeat the process on the other side of the fish.

To remove the remaining bones, bend a part of the fillet to one side so that some bones protrude, insert the knife between them, and separate from the flesh. Repeat as many times as necessary.
