Citrus and Quinoa Salad

Ingredients: ½ Cup of quinoa washed 1 Cup of Water 1 Teaspoon of salt 1 Cup of baby spinach ½ Cup of orange segments ½ Cup of grapefruit segments 1 Tablespoon of toasted pine nuts 1/3 Cup of olive oil for the vinaigrette 2 Tablespoons of balsamic vinegar for the vinaigrette 1 Pinch of salt for the vinaigrette ½ Pinch of pepper for the vinaigrette

In a pot of boiling salted water, cook the quinoa on low heat, covered, for 20 minutes or until cooked. Cool it down.

Mix the spinach with the quinoa, orange and grapefruit segments, and pine nuts.

Combine all the vinaigrette ingredients and mix with the salad.
