½ Cup of quinoa washed
1 Cup of Water
1 Teaspoon of salt
1 Cup of baby spinach
½ Cup of orange segments
½ Cup of grapefruit segments
1 Tablespoon of toasted pine nuts
1/3 Cup of olive oil for the vinaigrette
2 Tablespoons of balsamic vinegar for the vinaigrette
1 Pinch of salt for the vinaigrette
½ Pinch of pepper for the vinaigrette

In a pot of boiling salted water, cook the quinoa on low heat, covered, for 20 minutes or until cooked. Cool it down.
