Atole with Joy of Amaranth

If you enjoy traditional Mexican sweets, you must try this atole with the joyful ingredients of amaranth and the special touch of Tres Estrellas® Rice Flour, which provides a great amount of vitamins, minerals, and fiber. Enjoy it during the cold season!

  • 3 cups whole milk
  • 1/4 cups Tres Estrellas® rice flour
  • 3/4 cups piloncillo, grated
  • 1/2 cups water
  • 2 cups amaranth
  • 2 tablespoons walnuts, chopped
  • 2 tablespoons peanuts, in halves
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons raisins
  • 1 cup evaporated milk
  • amaranth joy, in pieces for decoration

  • Pour the whole milk into a bowl, add the Tres Estrellas® Rice Flour, and dissolve with a whisk for about 3 minutes. Set aside.
  • In a hot saucepan, place the piloncillo, pour in the water, and stir until dissolved. Add the amaranth, walnut, peanut, pumpkin seed, and raisins, mix, and cook for 3 minutes or until a thick consistency is achieved. Remove from heat.
  • Blend the previous amaranth mixture with the evaporated milk. Set aside.
  • Pour the blended mixture into a deep pot over low heat, add the Tres Estrellas® Rice Flour diluted in milk, and stir constantly until combined; cook for 8 minutes or until the milk boils.
  • In a cup, place some pieces of joy candy, serve the hot atole, and decorate with more candy pieces.
