Coconut Rice Atole

  • 1 cup milk, to hydrate the flour
  • 1/2 cups Tres Estrellas® rice flour
  • 3 cups milk
  • 3/4 cups coconut cream
  • 1 cup evaporated milk
  • 1/4 cups condensed milk
  • 1 tablespoon vanilla essence
  • 1 cinnamon stick
  • 1/4 cups shredded coconut, toasted, for decoration

  • In a bowl, mix the milk and Rice Flour Tres Estrellas® until completely dissolved. Set aside.
  • Blend the milk, coconut cream, evaporated milk, condensed milk, and vanilla for 3 minutes or until you obtain a homogeneous mixture. Set aside.
  • Pour the mixture into a pot over medium heat, add the cinnamon, and when it comes to a boil, add the Rice Flour Tres Estrellas® previously hydrated with milk. Cook for 10 to 15 minutes over low heat, stirring constantly, until it thickens.
  • Serve the rice atole and garnish with grated coconut.
