Cajeta Crowned Atole

Delicious cajeta atole that you can enjoy with a rich batch of tamales, to warm up on those cold days, or for any occasion that calls for it.

  • 3 liters cow's milk
  • 640 grams cajeta
  • 1 box cornstarch
  • 1 glass water
  • 4 rods cinnamon

  • In a pot, bring 3 liters of milk to a boil along with the cinnamon sticks.
  • Meanwhile, in a container, add 3 generous tablespoons of flour and dissolve it with water until there are no lumps.
  • When the milk is about to boil, remove the cream that forms and add the flour mixture; at this point, you must stir constantly to mix well and let the atole boil again for about 10 minutes.
  • Add 320 grams of cajeta (half a jar) to sweeten the atole; at this point, you must stir the atole constantly until the cajeta dissolves.
  • Finally, let it boil for about 3 minutes and it's ready.
