Tropical Horchata

For the heat, nothing is better than very cold water, but without sugar it’s hard to enjoy, so here you have a perfect recipe for diabetics that the rest of us can also enjoy ;)

  • 1 coconut, tender
  • 1 manila mango
  • ice cubes, necessary amount
  • 1 liter water

  • When choosing the fruit for this refreshing recipe, make sure that the coconut has enough meat and that the mango is well ripened but not bruised. You can buy the coconut with the shell or pre-peeled, but I recommend the one with the shell because although it will take time to open, you can ensure that it's clean.
  • I use coconut water to blend the fruit because I feel it gives it a very good flavor, but if you don't want to or don't like coconut water, you can use regular water. Blend the coconut pulp with water until there are no large pieces of coconut left, strain the water because nobody likes to chew their water ;)
  • Once we have strained the coconut water, we blend the mango with the ice and add the mixture to the coconut water; the mango will add a sweet touch without adding sugar, but if you think it's necessary, you can add some stevia sweetener, mix well, and add the rest of the water.
