Remove the rind from the watermelon.
Cut half of the watermelon into small cubes and set aside.
Place the rest of the watermelon in a food processor, make a puree; once ready, strain it through a fine sieve.
In a pitcher, combine the puree with the watermelon cubes and refrigerate until serving time.
