Cemitas with Nutella

  • 3 cups flour
  • 1 envelope yeast
  • 1/2 teaspoons salt
  • 1 teaspoon sugar
  • 1 1/4 cups water
  • 1/2 cups wheat bran
  • 1/2 cups flour, for the atole
  • 2/3 cups water, for the atole
  • 1/2 eggs, mixed, for the atole
  • 1 teaspoon sugar, for the atole

  • 1 teaspoon Nutella®, 15 g each

  • Use your mixer with the paddle attachment to mix the flour, yeast, and sugar. Gradually add the salt and water.When the ingredients are well combined, incorporate the bran and mix until you get a homogeneous dough. Place in a bowl, cover with plastic wrap, and let it ferment for 30 minutes.
  • To make the atole that will be used to glaze the cemita: in a bowl, mix the flour, water, egg, and sugar. Set aside.
  • On a flat surface, form a large cylinder of dough and divide it into portions of 130 g each. Shape into balls and divide the dough into ¾, making a little figure with one part larger than the other. Twist the small ball and place it facing down on the table.Dust the table with flour and bran and flatten the ball with your hand. Place on a tray with the small ball facing up. Glaze with the atole and let ferment for 30 minutes. Bake for 25 minutes.
  • Serve the cemitas on a board and spread a teaspoon of Nutella®. Accompany with fruit and milk.
