Use your mixer with the paddle attachment to mix the flour, yeast, and sugar. Gradually add the salt and water.

When the ingredients are well combined, incorporate the bran and mix until you get a homogeneous dough. Place in a bowl, cover with plastic wrap, and let it ferment for 30 minutes. To make the atole that will be used to glaze the cemita: in a bowl, mix the flour, water, egg, and sugar. Set aside.
