  • 3 cups flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1 1/4 cups butter, at room temperature
  • 1 1/2 cups sugar
  • 4 eggs
  • 1 1/2 cups cow's milk
  • 1/4 cups vegetable oil
  • 1 1/2 cups apricot jam
  • nonpareil sprinkles, whites

  • Preheat the oven to 170°C.
  • Sift the flour, cornstarch, and baking powder.
  • In a mixer, add the butter and beat until smooth.
  • Add the sugar and eggs one at a time until fully incorporated, add the milk, oil, and beat until completely integrated.
  • Gradually add the dry mixture and beat until you obtain a smooth mixture.
  • In a floured and greased cupcake mold, pour the preparation to 3/4 of its capacity and bake for 18 minutes, let cool and set aside.
  • Heat the apricot jam and coat the pancakes, then roll them in white sprinkles.
  • Enjoy, serve with a glass of milk.
