Tricolor Shells

  • 1/4 cups cow's milk, warm, for the dough

  • 4 cups flour, for the dough

  • Mix the milk with the yeast. Let it rest for 10 minutes and set aside.
  • For the dough: mix flour with sugar, salt, egg, vanilla extract, and hydrated yeast in a bowl, add the milk, and knead until you have a smooth and elastic dough.
  • Add the butter and continue kneading until well integrated and you have a very soft dough.
  • Grease a bowl and place the dough inside, cover with plastic wrap, and let it ferment for 1 hour or until it doubles in size.
  • For the crust, mix butter with powdered sugar and flour until you have a homogeneous mass. Divide into 3 parts and color one portion with red dye and another with green, weigh out 15-gram portions of each.
  • Once the dough has risen, weigh out 75-gram balls and place them on a previously greased and floured baking sheet, using your hands, gently flatten them until they are flat and brush with melted butter.
  • On a floured surface, shape strips of each color for the crust, join them using your hands, and place between two layers of non-stick plastic; flatten to the size of the shell.
  • Place the tricolor crust on each shell and, using a cutter, press to shape, or you can lightly cut squares with a knife.
  • Preheat the oven to 180°C.
  • Let the shells rise for an additional 15 minutes and bake for 22 minutes.
  • Remove from the oven, let cool, and serve.
