Celebrate World Sea Turtle Day this June 17 with these original turtle-shaped shells! Fluffy and with a mild lemon flavor, they are an excellent option for your coffee with milk.
For the dough, in a mixing bowl, add the flour, dry yeast, milk, butter, egg, salt, and knead with the hook for 15 minutes until you have a homogeneous and elastic dough.
Add the yellow lemon zest, place the dough in a previously greased bowl, and cover with cling film, let it rise for 1 hour or until it doubles in size.
For the crust, in a mixer, add all the ingredients and mix for 2 minutes until a homogeneous dough forms; it is important not to overmix to avoid overheating the crust.
Using a tortilla press, flatten 30-gram balls to form the shell covering. Set aside.
On a table, place the dough and remove excess air with your hands, cut portions of 80 grams and shape them into balls with your hands. Cut smaller balls of approximately 10 grams and shape them into legs.
Finally, cut balls of approximately 20 grams to form the head.
Place the legs at the bottom of the shell, do the same with the head. Place the shells on a greased and floured baking tray, cover with the crust, and using a knife, cut in a diamond shape to simulate the turtle shell; you can also use a shell cutter.
Using a brush, glaze the head and legs with egg. Let it rise for 15 minutes before baking.
Bake for 20 minutes at 180°C. Let cool and set aside.
Place the melted chocolate in a resealable bag and cut a small hole to create the eyes and mouth. Let dry on a rack.
Serve and enjoy with a glass of milk.
