For the dough, mix the flour with the sugar, salt, and dry yeast; incorporate the milk and Huevo San Juan®; finally, gradually add the butter until you obtain a smooth and homogeneous dough. Let it rest in a greased and covered bowl for 30 minutes, until it doubles in size.
Punch down the dough and roll it out; evenly distribute the cheese and bacon, roll it up, and brush with Huevo San Juan®.
Chill the roll for 1 hour; then, cut thick slices and arrange them in a baking dish, brush with Huevo San Juan® and sprinkle with a bit of coarse salt; bake for 30 minutes at 180 °C, or until golden.
