In a bowl, mix the water, yeast, and sugar. Let it rest for 10 minutes.
In a bowl, mix the Danone® Greek yogurt, flour, salt, and yeast mixture. Stir until a dough forms, place in a previously greased bowl with oil, cover, and let it ferment for 30 minutes.
Form 4 bagels and place on a tray. Ferment for 15 more minutes.
In a pot with enough water, cook the bagels one by one for 5 minutes on each side. Remove and place on a tray with parchment paper. Brush with egg and sprinkle with sesame seeds. Bake at 180 °C for 20 minutes, slice in half, and set aside.
For the egg: Mix the egg, Danone® Greek yogurt, bacon, salt, pepper, and cheese. Add a teaspoon of olive oil to a pan and cook the egg over medium heat for 5 minutes. Set aside.
Fill the bagels with scrambled egg, place a leaf of lettuce, and close. Serve the bagel with egg on a large plate and enjoy.
