Cottage Cheese Omelette with Spinach

Sugary cereals, sweet bread, crispy bacon, or pancakes with maple syrup are delicious breakfasts, but they DO NOT benefit people with type 1 or type 2 diabetes. Enjoy this cottage cheese omelette with spinach; it is a dish low in sugar, high in protein, iron, and fiber. This breakfast is perfect for taking care of the diet of people with diabetes.

  • 2 eggs
  • 2 tablespoons sour cream
  • 1 1/2 cups cherry tomato, in halves
  • 2 tablespoons balsamic vinegar, for the tomatoes
  • 1/4 cups olive oil, for the tomatoes
  • oregano, for the tomatoes
  • 2 tablespoons olive oil
  • 1/2 cups requesón
  • 1 cup spinach
  • salt, for seasoning
  • pepper, for seasoning
  • chile flakes, for serving
  • fresh oregano

  • Place the egg along with the sour cream in a bowl, season with salt and pepper, and mix using a whisk until it slightly froths. Set aside.
  • Place the tomatoes on a baking sheet, drizzle with balsamic vinegar, olive oil, enough oregano, salt, and pepper. Bake at 200° C for 15 minutes or until the tomatoes are roasted. Remove from the oven and let cool slightly.
  • Make the omelette: Pour the olive oil into a non-stick skillet, heat over low heat, and add the egg mixture, making sure it spreads throughout the skillet. Cover and cook for 8 minutes. Once the time is up, uncover and fill with cottage cheese, spinach, and the tomatoes. Fold the omelette in half and cook for 2 more minutes. Remove from heat.
  • Garnish the omelette with chili flakes and fresh oregano. Serve it with spiced black tea. You will love it!
