1 1/4 cups San Juan® egg whites
2 bunches green asparagus extra special
20 grams butter
50 milliliters cow's milk
125 grams feta cheese
5 grams pepper
10 grams salt
500 milliliters water

Blanch the asparagus in boiling salted water, remove and cool.
Whisk the egg whites with the milk. Season with salt and pepper and add the asparagus.
Heat the butter in a pan, add the egg white mixture and feta cheese.
Cook the preparation at low temperature. Once the edges are golden and the center is soft, remove from the pan and cut into slices.
