Mushroom Quiche with Gruyere Cheese

  • Preheat the oven to 180 °C.
  • Roll out the puff pastry using a little flour. Cover the mold with it and prick the bottom with a fork, then cover with aluminum foil. Place raw beans on top to create weight. Bake for 25 minutes, remove the aluminum foil and the beans. Return to the oven for another 10 minutes.
  • Slice the onion and cook it until caramelized. Clean the mushrooms and slice them into semi-thick pieces.
  • In a bowl, mix the eggs, cream, milk, and both cheeses. Add the mushrooms, onion, chopped parsley, salt, and pepper. Pour the mixture over the precooked pastry and bake for 15 minutes.
  • Sprinkle more chopped parsley on top.
