1 cup Oikos® greek style yogurt
1 pie crust
1 yellow onion, finely chopped
1 tablespoon olive oil
1 package frozen spinach
240 grams Gruyère cheese, grated
4 eggs
1/4 cups cow's milk
salt and pepper

Preheat the oven to 180°C. Blind bake the crust in a pie dish until golden, 12 to 15 minutes.
Sauté the onion in olive oil for 2 to 3 minutes. Add the spinach until it is heated through.
Place it in the crust and top with the cheese.
In a bowl, whisk the eggs, Oikos, milk, salt, pepper, and nutmeg. Pour over the filling and bake until set, 35-45 minutes.
