Spanish tortilla or potato tortilla is one of the most typical dishes of Spanish cuisine; it is a dish made with eggs, potatoes blanched in oil, and onion. This dish can be served as a tapa or pincho and is accompanied by salsa brava or alioli.
Heat a skillet over medium heat with oil over medium-low heat and add the garlic to flavor it. Gradually add the potatoes and cook until soft. Incorporate the onion and cook until translucent, remove from heat, strain, cool well, and set aside.
In a bowl, beat the eggs with salt and pepper, add the previous mixture and incorporate well.
Heat a skillet over medium heat with olive oil, add the previous mixture, and cook over low heat until cooked through; using another skillet or plate, flip the tortilla and cook on the other side until it takes on a light golden color on both sides.
Remove from the skillet by flipping with the help of a plate, serve with alioli. Enjoy.
