Fluffy Spinach and Cheese Omelette

  • 1/2 tablespoons REXAL® baking powder, 8 g
  • 4 eggs
  • 1/4 cups onion, 50 g, finely chopped
  • 1/2 teaspoons garlic powder, 4 g
  • salt

  • 2 tablespoons vegetable oil, 30 ml, for the omelette
  • 1/2 cups goat cheese, 100 g, sliced
  • 1/3 cups spinach, 60 g
  • 1/4 avocados, sliced, for serving
  • toasted sesame seeds, for garnish

  • In a bowl, mix the egg pieces with REXAL® baking powder, onion, garlic powder, salt, and enough pepper; integrate using a whisk or fork with folding movements.
  • In a hot non-stick skillet (the size you want for your omelette), pour a little vegetable oil and then the egg from the center of the skillet, spreading the mixture gradually outward. Cover and cook on low heat; you should check the egg continuously until you notice the surface starting to look solid, which will be the exact moment to uncover.
  • Divide the omelette in half, placing goat cheese and baby spinach on one side, then fold the other half over like a quesadilla, cover, and cook for a few more minutes, uncover and remove from heat.
  • Serve with a little avocado and toasted sesame seeds.
