Ingredients: 1/2 tablespoons REXAL® baking powder, 8 g; 4 eggs; 1/4 cups onion, 50 g, finely chopped; 1/2 teaspoons garlic powder, 4 g; salt; pepper; 2 tablespoons vegetable oil, 30 ml, for the omelette; 1/2 cups goat cheese, 100 g, sliced; 1/3 cups spinach, 60 g; 1/4 avocados, sliced, for serving; toasted sesame seeds, for garnish

In a bowl, mix the egg pieces with REXAL® baking powder, onion, garlic powder, salt, and enough pepper; integrate using a whisk or fork with folding movements. In a hot non-stick skillet (the size you want for your omelette), pour a little vegetable oil and then the egg from the center of the skillet, spreading the mixture gradually outward. Cover and cook on low heat; you should check the egg continuously until you notice the surface starting to look solid, which will be the exact moment to uncover.
